Tapioca Pudding

Happy Tapioca Pudding Day!

As soon as I get my tapioca pudding to thicken, I will post the recipe. I tried plain rice milk as a substitute for cow’s milk, while the flavor was sweet and creamy, the pudding never firmed up. I adjusted the recipe and used vanilla rice milk; although it looked better than the plain, it was still not quite the consistency that I was looking for.
