Belgian Waffles

Is it wise to be hungry when you are cooking? So hungry that you grab what you think is the correct container, but find out (after you have already mixed it in) that it isn’t? I picked up Vanilla Rice Dream instead of the Plain, but I hadn’t noticed it until I was putting the remaining rice milk into the refrigerator. Today my mistake turned out delicious.

1 1/2 cups plus 1 heaping tablespoon unbleached white flour
1 1/2 tablespoon sugar
3/4 tablespoons Rumford baking powder
1/2 teaspoon salt
1 3/4 cups vanilla rice milk
1/3 cup vegetable oil
2 large eggs
1 tablespoon brandy (I used Paul Masson Grande Amber)

Place ingredients, except the brandy, in a large mixing bowl and combine until well-blended and smooth; Stir in brandy. Let batter sit 5 minutes before using. Preheat waffle maker on medium. Follow manufacture’s instructions.

Serve immediately.
