Banana Bran Muffins

These muffins are moist and filling. The perfect side with any meal!

Banana Bran Muffins

1 cup unbleached white flour
1 cup whole wheat bran
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecan meal
2 large, ripe bananas
1/2 cup margarine
1/2 cup firmly packed dark brown sugar
1 large egg

Preheat an oven to 375°F. Coat muffin tins with non-stick spray.

In a medium bowl stir and toss together the flour, bran, baking soda, salt, and pecan meal. Set aside. Peel bananas and put in blender. Blend until smooth. Add margarine-the mixture will look lumpy-and blend. Add the brown sugar and the egg, blend until mixed.  Pour blended ingredients into the dry mixture. Stir just until blended.

Spoon into the prepared muffin tins. Bake until toothpick inserted in the center of a muffin comes out clean, 15-20 minutes. Cool in the tins for 5 minutes, then remove.

Makes about 12 standard muffins.

  1. I tried this recipe and it was AWESOME. Follow it to the letter and you will have perfect banana bran muffins. NOTE : If you can’t find pecan meal at Whole Foods, just check out their fresh nuts section, grab 3/4 lbs and use your blender instead 🙂
