Pancakes are one of those items that everyone seems to want me to make, especially when we have guests. So, in order for me to join the family for breakfast, I did a little substituting ingredients and no one was the wiser. These are delicious!

Here is my recipe for fluffy pancakes:

1 1/4 cup unbleached white flour
3 teaspoons Rumford baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 egg, beaten
1 cup vanilla rice milk
2 tablespoons safflower or canola oil

*Extra margarine to melt on griddle.

Stir flour, baking powder, sugar, and salt together. Combine egg, rice milk, and oil. Add mixture to dry ingredients. Stir until just moistened. Melt margarine on hot griddle to coat surface. Using a spoon or ladle, scoop mixture onto hot griddle and bake. Repeat. Makes about 12 dollar-size pancakes.
